Why Longevity?

We have been pondering about our lifestyle: The Tuscan countryside is quiet and at times it can seem a bit lonely, but is also a place where we can find real connections, real ingredients and rooted traditions. Maybe that is the longevity everyone talks about? So after years of listening to our guests’ curiosities about us and our lifestyle we thought, why not turn the answers into a hands on experience?

Cooking is a manifestation of our customs, it brings people closer to one another and grounds us deeply.

Our way of eating real primary ingredients, of sharing and living simple habits is better than any medicine. It is not only an opinion it is also scientifically proven.

The starting points for our Longevity secret are “What do we eat?”, “Where?”, “With Whom?”.

WHAT do we eat

It all starts with the soil. A lifestyle centered on a Mediterranean diet, rich in extra virgin olive oil, legumes, and fresh greens actively prevents the diseases of aging. The PREDIMED Study, 2013

Extra virgin olive oil is “liquid gold” that cools inflammation, legumes nourish your gut microbiome, and garlic keeps your heart resilient. By cooking what grows just steps away, you’re eating peak antioxidants that protect your cells from the inside out.

WHERE do we breathe

In the ancient village of Castelnuovo dell’Abate in the heart of Val d’Orcia, the pure air and the stillness of the valley act as a biological “reset button.” Our environment can actually signal our genes to turn off stress and disease. Breathing in the “forest medicine” of the Tuscan scrub boosts your immune system, while following the natural rhythm of the sun restores your sleep and allows your brain to recharge. Environmental Epigenetics, 2011

Here, cooking in a place where history and nature meet is a therapy that lowers oxidative stress and restores your vital energy.

WITH WHO do we share

Perhaps the most beautiful discovery is that to embrace longevity it actually takes a village. A close-knit community can protect the heart better than any medicine. Sitting together, laughing, and sharing a long meal triggers oxytocin, the “bonding hormone” that is known for repairing heart tissue and lowering blood pressure. The Roseto Study (1993)

Eating slowly and socially switches your body into “rest and digest” mode, ensuring you absorb every nutrient perfectly. The table is where we stay young. That is why we wished to add something extremely creative, and nothing engages more creativity than making pizza together.
